Collard Greens

Serves 4-6 as a side dish

2 1/2 LBS. COLLARD GREENS, tough stems removed, washed, shaken to remove extra water, and roughly chopped
4 SLICES BACON, chopped
1 MEDIUM ONION, minced
BLACK PEPPER
RED WINE VINEGAR

1. Bring one cup of water to a boil in a large casserole. Add damp greens and salt to taste. Cover, reduce heat, and simmer stirring once or twice, until greens are very tender, about 15 minutes.

2. While greens are cooking, fry bacon in a medium skillet over medium heat until crisp, about 6 minutes. Use a slotted spoon to transfer the bacon to a small plate. Spoon off all but a tablespoon of the bacon fat. Add the onion to the pan with the bacon fat and sauté until the pieces begin to brown around the edges, about 5 minutes. Remove the pan from the heat.

3. When the greens are tender, add pepper to taste (these taste best with lots of pepper) and simmer, uncovered, until the greens reach the desired consistency, 1-2 minutes if you like greens soupy, 5 minutes for you want them drier. Stir in reserved bacon and onion. Adjust the seasonings, adding vinegar to sharpen the flavor (about a teaspoon). Serve Hot.

Welcome to the North City Farmers' Market!

The North City Farmers’ Market enters its second season with an invigorated passion for delivering quality vegetables, fruits, baked goods, hot food, crafts, flowers and much more to the residents of Old North St. Louis, St. Louis Place, Hyde Park and north St. Louis as a whole. The departure of many grocery store chains from the area has left behind only gas stations and convenience stores that feature high-priced, low-nutrition foodstuffs that decrease the general health of the community. The mission of the North City Farmers’ Market is to grow community health by offering affordable, fresh produce, free health screenings (by Grace Hill Neighborhood Health Centers), and healthy cooking demonstrations while encouraging community participation and weekly gatherings for residents and visitors alike.

In addition, the North City Farmers’ Market will provide entertainment, including music, food samples, bicycle give-a-ways (18 and up), and other surprises designed to show St. Louis that healthy home cooking stews, simmers, and bakes in north side kitchens. This year, serving the community will be facilitated by the ability of the market to take Electronic Benefit Transfer (EBT) cards, in addition to cash and market vouchers, which will be distributed through local food pantries.

There are many opportunities to sell perishables and non-perishables (crafts) at the North City Farmers’ Market. The market strives to enhance and reflect the community, so we invite local business owners and individual entrepreneurs to apply for booth space and (abiding by St. Louis City guidelines) join us for a few hours on Saturday mornings. The North City Farmers’ Market is located in the newly renovated Crown Square, formerly known as the 14th Street Mall, at the intersection of 14th and St. Louis Ave. (across the street from Crown Candy). The market will run every Saturday June 7th through October 25th, from 9am to 12pm. The market is produced thanks to a grant from the Missouri Foundation for Health, the initiative of the folks at New Roots Urban Farm in collaboration with Old North St. Louis Restoration Group, and numerous other individuals and community groups. We are looking forward to a great season and hope you will join us.

EBT Machine at the Market

EBT (Electronic Benefits Transfer) is the technology used today for Food Stamp purchases. Rather than having paper vouchers like they did years ago, Food Stamp clients now have all their benefits saved electronically on plastic cards much like debit or credit cards.
